Baking

The sweeter the better

Choc Chip and Spiced Pumpkin Bread

Choc Chip and Spiced Pumpkin Bread

There’s Tilly-Mae with the goods in her hands.  As I placed the tray in her eager little mitts she inhaled somewhat over dramatically and wide-eyed (she is my goddaughter after all): “That smells very good, Auntie Ceri!” That girls knows quality baking when it’s laid before her. Share the... More →
Chocolate and salted caramel oat crunch

Chocolate and salted caramel oat crunch

The title’s a royal mouthful which perfectly reflects the product itself: a sumptuous, rich and decadent mouthful of buttery oats, rich caramel sauce and layers of the chocolate of your choice. I opted for a mix of white and milk which never fails to get my taste buds in a tangle! And yes, these irresistible little squares of sweet love are every bit as naughty as they look and a bite size piece should satiate even the sweetest of teeth. I hadn’t originally planned on blogging this recipe but after several requests on my Facebook page I have decided to do just that; I cannot and will not disappoint my Warriors, particularly where cake is concerned! Some people say love is the universal language which bonds and unites us all. I say it’s cake. Share the... More →
Tilly Mae’s FROZEN birthday cake!

Tilly Mae’s FROZEN birthday cake!

Two years ago, for TM’s 1st birthday, I decided to attempt my first ever fondant cake. It was laborious, it was stressful and tears were shed. But the hard work and steep learning curve were worth it because I ended up creating this psychedelic little beauty. However, I swore there and then that I’d be taking a wide berth from working with fondant and for Tilly Mae’s 2nd b’day I remained true to my word: I didn’t go near the stuff!! In fact, I don’t even think I made her a cake last year! Share the... More →
Davina’s sugar free brownies

Davina’s sugar free brownies

Since Davina appeared on This Morning a few days ago and unveiled her sugar free brownies recipe there has been quite the storm on social media with members of the public up in arms over her use of the words “sugar free”. Now here’s the thing: Davina isn’t stupid and neither are you or I. A quick glance at the ingredients (honey, maple syrup, chocolate) and it soon becomes apparent that this recipe does indeed contain sugar. BUT it’s the kind of sugar that is in question here – naturally occurring versus refined. So what I’m saying and, I’m sure Davina would agree, is that these brownies are meant to be enjoyed as an OCCASIONAL treat when your sweet tooth is getting the better of you but you’re still determined to avoid ingesting a whole bunch of refined sugars. Got it? Share the... More →

How to make a 6 layer rainbow cake!

How to make a 6 layer rainbow cake!

It may look complicated and elaborate but it’s surprising easy to make, honest. And it really is worth the time and effort because look what you get at the end of it – truly beautiful to behold and a tastebud sensation! The first thing you’re going to do is preheat your oven to 350º f/180º. I lined three 7-inch pans with parchment paper and baked the sponges in two batches. Simples! Basically, use whatever pans you have at your disposal, between 6 and 8 inch will be fine. Share the... Review: Red Velvet Cake Pop Kit!

Review: Red Velvet Cake Pop Kit!

This lovely lady is called Becca, and she is the founder of The Baking Tree, a small cottage industry borne in 2012 out of Becca’s passion for baking. I met Becca at the Cake and Bake Show a couple of weeks ago in London where she offered me a sample of one of her cake pops. I liked it. A lot. So much so that I MAY have swiped another when no-one was looking. Sorry Becca, but it’s your own fault for making them so irresistibly delicious. Share the... More →
The Cake and Bake Show 2014!

The Cake and Bake Show 2014!

One thing I really love about living south of my natural border is the close proximity to London and thus ready access to all kinds of fabulous events in the nation’s capital. One such event is the Cake and Bake Show. I meant to go last year but for one reason or another it passed me by. Not this year, however! I was ready for some tantalising sweet treats and to see some celebrity chefs in action and I wasn’t disappointed in either case! Share the... More →
Cinnamon Chip Snickerdoodle Cookies

Cinnamon Chip Snickerdoodle Cookies

I tried these sweet little beauties during my time in the US and it was love at first bite. HAH! D’you see what I did there?? Pure GW genius. Crap cookie jokes aside I really did fall in love with these soft pillows of cinnamon love and immediately demanded that Staci (my lovely friend that made them) share the recipe. She was happy to oblige which was just as well as I may have had to get violent had she refused. Share the... More →
Coca Cola BBQ sauce

Coca Cola BBQ sauce

When  Craigy Boy and I were in the USA a couple of months ago we stocked up on some items that you just don’t find here in old Blighty. Amongst them was this saucy little gem, Sweet Baby Ray’s Coca Cola BBQ sauce. It’s my absolute favourite table sauce of all time and I’ve tried to make it last as long as possible. But, as you can see, it’s not long before Sweet Baby Ray and the GW must part company. And the very thought pains me. I will be able to stock up once again when I head to California next week and I’m sure my transatlantic friends would happily ship me over a bottle or two from time to time but it’s not the ideal solution. No siree! The ideal solution is that I learn to make my very own. And that’s what we’re going to do today, my BBQ loving Warriors. Share the... More →
Chocolate Caramel Wafer Slice

Chocolate Caramel Wafer Slice

Greetings Warriors of the World and what another glorious morning it is here in Englandshire!  Then again, ’tis always a glorious day when I’m sending some chocolate love your way, some CHOCOLATE CARAMEL WAFER SLICE love to be exact.  This right here is a Ginger Warrior original concoction! YEAH BABY!! Well, when I say original I’m aware that this is a variation on a theme and that there are already hundreds of chocolate slice recipes out there but I’m pretty sure my combination of crispy yet chewy Tunnocks caramel wafers and crunchtastic rocky road choccie biccies is a first. I am prepared to stand corrected. Share the... More →
Jordans Zesty Oat Squares

Jordans Zesty Oat Squares

You just never know where you’ll chance upon a mighty fine recipe! I spend hours scouring the internet or zipping through cookery books for tempting treats when all I really need to do is look on some labels in my very own kitchen since today’s recipe comes direct from the side of my cereal box. I love the contrast of the chewy oats and sultanas and the crisper bite of the sunflower seeds. Add to that the zesty punch of the juice and rind of a lemon and orange and you’re onto a winner, gosh darn it! Share the... More →
Lemon and blueberry tray bake. The taste of summer is here!

Lemon and blueberry tray bake. The taste of summer is here!

There are some winning flavour combinations out there, my Warriors, and this has to one of my ultimate faves! It’s fresh, zesty and in my humble and amateur baking opinion, the perfect little summer number – juicy plump blueberries (one of your five a day of course), flecks of lemon throughout cake and frosting (one of your five a day of course) and a silky, tangy lemon glaze which smothers the cake like a bakey cakey blanket of luuuuurve!   Share the... Oreo cake

Oreo cake

Very few people dislike oreos and very few people dislike chocolate which surely makes an Oreo Cake the ultimate sweet treat!  If you are one of the few people who is able to nonchalantly pass up on an Oreo or slice of choccy cake then I must pose the question: WHAT IS WRONG WITH YOU?? Kidding of course, that is jealousy speaking right there. It is exactly due to my distinct lack of willpower when faced with all things chocolate that I am currently undergoing the Clean 9 cleansing program. (You can keep up-to-date on my progress with that little nugget right HERE). Share the... More →
Orange, cream cheese and chocolate loaf

Orange, cream cheese and chocolate loaf

Three of my most favourite ingredients all lovingly crammed into one loaf.  Three of my most favourite ingredients soon to be all lovingly crammed into my mouth. That’s just how it works around here. Today’s tastetastic triumph comes from one of my fave baking bloggers, Miss Joy the Baker. I followed her recipe to the T apart from one small detail.  As you may notice I took it upon myself to add an extra handful of dark chocolate chunks. And why wouldn’t I??  Speaking of dark chocolate chunks, this is the variety I opted for: Share the... Lemon lemonies

Lemon lemonies

I was searching for some inspiration for today’s recipe when I came across the ideal candidate being passed around on Facebook.  It looked perfect for my Warriors as I know you like me to keep it simple and effective.  Today’s recipe comes from bakerella.com and it won’t disappoint! What you have right here are mouth-watering morsels which pack a zesty punch!  Particularly appealing is the fact that there is no faffing, no fuss since all the ingredients are thrown into one bowl and mixed by hand.  Ta da!   Share the... Salted Caramel Fudge. Mmmm!!

Salted Caramel Fudge. Mmmm!!

I have a slight obsession with all thing salted caramel.  For me it’s the perfect blend of savoury and sweet.  i.e. little bit of savoury and a WHOLE lot of sweet! I found this recipe after doing a random google search.  It was the one that appeared at the top of the page and since giving it a bash a few months ago I’ve never used another recipe. Haven’t felt the need to. Why fix that which isn’t even remotely broken? Share the... More →

Mint choc chip GLUTEN FREE brownies

Mint choc chip GLUTEN FREE brownies

I was always under the impression that gluten free meant taste free.  I came to this conclusion seven years ago when I had planned to make brownies for some of my students for the last day of term. One of them, Julie, had recently been diagnosed with coeliac disease (a common digestive condition where a person has an adverse reaction to gluten) and so off I went to my local Tesco to hunt down some gluten free goodies so that Julie could also join in with our end of term celebrations.  The GW isn’t one to exclude. White Chocolate Rocky Road!

White Chocolate Rocky Road!

Hi! I’m Anneliese and I am delighted to have the opportunity to write a guest post for the Ginger Warrior – a true honour!   For Food-Filled Friday I wanted to share something sweet, chocolatey and super quick to make. I adore rocky road as it ticks all of the aforementioned boxes but I wanted to shake things up a bit and, *GULP*, use white instead of milk or dark chocolate. I know it’s a shocking consideration but please stick with me, if you will. Not only does white chocolate make a nice change it also looks so pretty, especially studded with the multi-coloured, vibrant dried fruits and marshmallows. I originally created this recipe for children to make. Yes, it really is that easy, so no excuses please!   Share the... More →
You voted for THIS cake to be made!

You voted for THIS cake to be made!

On Food-filled Friday last week I asked you, my beloved Warriors, which sweet creation you would like to see me bake and I presented you with THESE five caketastic options. Votes were cast and then counted by our specially brought in independent adjudicator (a.k.a. Craigy Boy). It was close Warriors, so very close and in the end only one vote separated the top two choices: Triple Lemon Layer cake and the Triple Layer Flecked Chocolate cake.  The beautifully plump lemons in the picture above surely gives the game away! Ah yes, in the end, the majority vote went to the lemon cake! And jolly good choice, Warriors, because although it was rather labour intensive to make, it was pure joy/bliss/rapture/delight/ecstasy to eat!  At least my work colleagues thought so as they licked their lemony spoons with gastronomic glee! Love was almost in the air…

As you read this, Warriors, I will be 37,000 ft above you so love will, quite literally, be in the air. Sounds so cosy and romantic, doesn’t it? Pity I’ll be completely drugged out on Diazepam and oblivious to it all. Well that’s the plan anyway. Flying for me is on the same level as root canals and open heart surgery without anaesthetic. But I grin my teeth and bear it because I am the Ginger Warrior and I have a fierce and invincible reputation to uphold.  GRRRR! Share the... More →

Choc Chip Cookies anyone?

Choc Chip Cookies anyone?

Well slap my thigh and hit me with a crowbar! There I was thinking that a baking video would be, excuse the pun, a piece of cake to put together.  Oh how wrong could a Ginger Warrior be?!  Something that I thought would take maximum of an hour ended up taking several which is why this post is not as timely as I hoped it would be.  Just as well that I’m a firm believer in better late than never. I have to be.  In my life I tend to be later that never.. Anyhoo.. Share the... More →
